केसर चाहे जाफरान (अंग्रेजी: saffron) एक तरह के सुगंधित मसाला होला जे केसर के पौधा के फूल से निकालल जाला। फूल में बीचा में गहिरा नारंगी लर नियर बहरें निकलल संरचना होखे लीं जिनहन के एकट्ठा क के सुखा लिहल जाला। पकवान सभ में एकर इस्तेमाल महक आ सवाद ले आवे वाला छिड़काव के रूप में भी कइल जाला आ पकवान सभ में रंग ले आवे खातिर मिला के पकावलो जाला। केसर के रंग के खास केसरिया रंग भा ज़ाफ़रानी रंग के नाँव से जानल जाला।
