Mliječna mast ili mliječna masnoća je mast suspendirana u mlijeku u vidu sitnih kapljica veličine 1 do 10 mikrometara. Mliječnu mast karakteriše velika količina niskomolekularnih masnih kiselina, a bogata je oleinskom kiselinom.
