Gazpacho is a cold soup made of raw vegetables. The popular dish is in Spain and Portugal, especially in hot summer. It originates from Andalusia in southern spain. Its main ingredient is ripe tomatoes. Fun fact: Gazpacho actually tastes better after leaving it for a couple of days.
