福山烧猪或称福山烧乳猪,是海南岛澄迈县福山镇的名菜。烧猪小的2至3斤,大至50斤,其特色在于50斤烧猪而能烧至外皮酥脆松。

制作方法

将猪只洗净后,从内腔劈开,使猪身呈平板状,用八角五香南乳等混和的香料匀涂在猪腔内,腌制30分钟后挂起风干,之后用沸水淋遍猪身使猪皮绷紧,再在猪皮上刷上糖水,最后的步骤是在炭火上原只烧烤。
