蒸肉饼的肉饼成分多数是猪肉,其中肉饼由肉类菜刀乱刀剁肉而成,当中人工功夫不少。现代肉饼制作或者转用搅肉口感不同。

坊间技巧

有饮食专栏指出应选用文武刀作主要的剁切,因可以把肉整齐地切成工整的颗粒以确保口感;而已充分搅拌至起胶的猪肉可以再摔挞一番,把当中的空气挤出,令肉质更弹牙[1]
