炒牛奶,又称炒鲜奶,是一种源于广东省顺德大良镇的菜式,属湿炒法的典型菜肴。
做法是把水牛奶混以蛋白和湿淀粉,配以虾仁、鸡肝、蟹肉、榄仁、火腿茸等佐料,以小火炒至凝结成半固体状即成。衍生的食制有炸牛奶。
