蛋白酶(英语:protease,proteinase)或肽酶(peptidase)是生物体内的一类(酵素),它们能够分解蛋白质。分解方法是打断那些将氨基酸连结成多肽链的肽键

蛋白酶是重要的工业酶,占全球总酶销售量约六成,其中七成用于工业用途的蛋白酶用于食品发酵等方面[1],例如酸性蛋白酶用于传统发酵食品和调味品的生产[2][3]催化酪蛋白沉淀;中性蛋白酶因能够去除水解产物的苦味而令酱油脱苦[4]碱性蛋白酶应用于食品烘烤等方面[5],因为能够有效提高生面团的延性和韧性,并且增强面包的起泡性。
