Sukker er ein type karbohydrat som gjev menneske og mange andre dyr ein søt smak om dei et dei. Dei er energirike, ofte lett nedbrytbare i kroppen, og er eit viktig drivstoff i livsprosessane. I daglegtale vert ordet «sukker» for det meste brukt om sukrose, bordsukker.
Sukker er eit fellesnamn på monosakkarid og disakkarid. Monosakkarida fruktose (fruktsukker), glukose (druesukker), og disakkarida sukrose, maltose og laktose (mjølkesukker) er vanlege sukker.
Sukker inneheld aldehydgrupper eller ketongrupper.
Deoksyribose, som er ein viktig del av DNA-molekylet er òg eit sukker.
Sukker vert brukt i matlaging for å gje søt smak til mat. Brus og godteri er matvarer som ofte inneheld mykje sukker.
Sukrose til bruk i mat vert seld som farin, melis, perlesukker og sukkerbitar. I tillegg kan ein få kjøpt druesukker og fruktsukker.
Sukker kan utvinnast frå plantar som sukkerrøyr og sukkerroe.
